Ingredients: Knob of vegan butter/spread little - zest of lime and orange - Approx 1.5 TBSP of soft brown sugar - Juice of 1\2 large orange - Juice of 1\2 lime - 3-4 bananas (cut lengthways) - A good slosh of rum
Method: Melt butter in a large frying pan. Add the orange and lime zest. Add brown sugar and allow to caramelize. Add the orange and lime juice and stir to create a citrus/caramel sauce. Add banana halves and flip the bananas several times to fully coat. Add a good slosh rum. Allow flame to lick into the pan, lit the alcohol… Flambé Allow flames to burn until the alcohol has burnt off for that get flambé taste. Serve banana and top with remaining citrus-caramel sauce.
Victoria and her husband are traveling through Europe and Morocco cooking delicious vegetarian food from the road in their camper van. Victoria has always had a passion for travel but before long would miss her kitchen and home cooked meals. When designing the camper van they put a lot of emphasis on the cooking space, with plenty of room for herbs and spices. Although they couldn’t quite squeeze an oven in they're enjoying finding creative ways to get around this.
